Stuck in a cooking rut? Same three meals on rotation? Here are ideas that actually work without requiring culinary school training.
One-Pan Dinners
Throw everything on a sheet pan. Chicken thighs, potatoes, vegetables. Season it, roast it. One pan to wash.
Works with fish too. Salmon, asparagus, lemon slices. 400 degrees for 20 minutes.
Slow Cooker Rescue
Dump ingredients in the morning. Come home to dinner that’s ready.
Pork shoulder with BBQ sauce becomes pulled pork. Chicken thighs with salsa becomes taco filling. Beef with broth and vegetables becomes stew.
The slow cooker is for people who don’t want to think about cooking until it’s time to eat.
Buddha Bowls
Grain base, protein, vegetables, sauce. That’s it. Mix and match whatever you have.
Rice, chickpeas, roasted sweet potato, spinach, tahini dressing. Looks Instagram-worthy, takes fifteen minutes.
Taco Tuesday Every Tuesday
Ground meat, taco seasoning, tortillas, toppings. Kids love it. Adults love it. Nobody complains.
Mix it up with fish tacos, shrimp tacos, carnitas. Same concept, different protein.
Breakfast for Dinner
Pancakes. Eggs and bacon. French toast. All of these are acceptable dinner foods.
Sometimes the best dinner is the one nobody argues about.
Homemade Pizza Night
Store-bought dough, jar sauce, shredded mozzarella. Let everyone add their own toppings. Bake at 450 until crispy.
Making the dough from scratch is optional. The store stuff works fine.
The Salad That’s Actually a Meal
Big bowl of greens. Lots of protein – chicken, steak, chickpeas. Vegetables. Good dressing. Enough substance that you’re not hungry an hour later.
